I thought I would share our favourite dinner at the moment 'Mexican Bean Bowl'
It's quick to make, pretty healthy and absolutely delicious!
Ingredients
2 x Cans of Black Beans
1 x Red Onion
2 x Cloves of Garlic
Sour Cream
Butter
Parmasen Cheese
3 x Avocados
Lime
Cherry Tomatoes
Mozzarella Cheese
Brown Rice
- Start by cooking your brown rice
- Heat up a pan and add butter
- Dice the red onion
- Add half of a red onion to the pan and save the other half for topping (if you like it)
- Fry the onion until it becomes translucent
- Add 2 minced garlic cloves to the pan and cook until browned
- Add the drained/washed black beans to the pan
- Toss the beans to incorporate all of the ingredients
- Cover the beans with water, stir occasionally until the water has almost boiled away and you have a consistency like photo 4 above
- Use a potato masher to mash the black beans with some sour cream, some parmesan, some butter and season to your desired taste
- Mash the Avocados and add the juice of half of a lime to taste
Add the black bean dip, avocado dip, cherry tomatoes, rice and mozzarella to your bowl and you have a delicious dinner, perfect for all of the family!
