Mexican Bean Bowl


I thought I would share our favourite dinner at the moment 'Mexican Bean Bowl'

It's quick to make, pretty healthy and absolutely delicious!

Ingredients

2 x Cans of Black Beans 
1 x Red Onion
2 x Cloves of Garlic 
Sour Cream 
Butter
Parmasen Cheese 
3 x Avocados 
Lime
Cherry Tomatoes 
Mozzarella Cheese
Brown Rice
  • Start by cooking your brown rice 
  • Heat up a pan and add butter
  • Dice the red onion 
  • Add half of a red onion to the pan and save the other half for topping (if you like it)
  • Fry the onion until it becomes translucent 
  • Add 2 minced garlic cloves to the pan and cook until browned
  • Add the drained/washed black beans to the pan 
  • Toss the beans to incorporate all of the ingredients 
  • Cover the beans with water, stir occasionally until the water has almost boiled away and you have a consistency like photo 4 above
  • Use a potato masher to mash the black beans with some sour cream, some parmesan, some butter and season to your desired taste
  • Mash the Avocados and add the juice of half of a lime to taste

Add the black bean dip, avocado dip, cherry tomatoes, rice and mozzarella to your bowl and you have a delicious dinner, perfect for all of the family!

A wedding on a budget!

When it comes to getting married everyone has a different idea of what they would like and how they would like their day to go.
Some girls dream about their wedding days their entire life, they have a plan in there mind of exactly how they would like there dream day to go.

My husband proposed to me on Coca beach in Florida during the sunset right after a thunderstorm( yes awfully romantic!)
We had been together 5 and a half years at this point.

We always said once we got engaged we would just get married.
We talked about what wedding we would like and initially looked into doing a destination wedding but for various reasons we decided against this idea.
We ended up deciding to do a Christmas Wedding. Our first real date was 19th December and Adam first asked me to be his girlfriend on Christmas Eve, so this has always been a special time for us.

We found our perfect venue which was a little wooden lodge in the forest which they decorated with fairy lights and and a huge tree for Christmas!
When we initially wrote the list of everyone we would like to invite we had a list of 110 people. This seemed totally normal, but then we started getting quotations! To have 110 people to our wedding we were looking at a overall spend of around 10k.
We realised we either had to cut the list or wait a few years to get married, so we cut the list.
We decided just to invite our very very closest friends and family. We didn't invite any old friends we hadn't seen in years or family we never see. This left us with a guest list of 28 people.
I loved doing it so small, it was much more intimate.

Every wedding is unique and everyones ideas are different. I am going to tell you about our wedding and if you take some thrifty ideas away then great :)

Here's the breakdown;


Wedding dress
I brought my wedding dress in Monsoon, it was £220 and beautiful.
This for me was perfect.




















Bridesmaids dresses
Beautiful blue dresses from Dorothy Perkins £35 each.
They were lovely dresses and could easily be worn again.
The bridesmaid did there own hair and makeup the way they wanted and wore there own shoes which I loved because they put their own spin on their outfit.

Suits
We just told the groomsmen to wear their own suits and we gave them matching ties. This saved us a fortune hiring suits and they were more comfortable in there own.
We actually got the ties on amazon for about £12 each.

Flowers
We made our wedding flowers ourselves with flowers from Dunelms.
I initially had a quote from a florist and there bouquets ranged from£60-£120.
I liked the idea of false flowers not only for the cost but we wouldn't have to worry about getting anything delivered on the day(Especially when December is snow time for England.) Plus we would be able to keep the flowers after.
The flowers totaled at £35.

















Table Decorations
I bought clear vases from Wilkinson's, stuffed with them blue tissue paper and then each bridesmaid put there bouquet in one. Viola they doubled up as table decorations!
My bouquet went in the centre of the top table.

Decorations
We didn't need to decorate anything because it was Christmas so the venue was already decorated!

Food
The food at our wedding venue was totally amazing!
We got married later in the day so we only had to provide one meal instead of meal and a buffet, this saved a fortune.
We served a 3 course meal to everyone and then in the evening had a few people walking around with a few nibbles.

Gifts for the parents
We brought a Champneys gift set for the mums and really nice wine for the Dads.


Music
We put together CD's of all of our favorite music instead of hiring a DJ.
We had calm mellow music playing during dinner and made it more lively as the time went on.


Entertainment
This is probably going to sound really tacky and lame but it really wasnt.. it was really funny!
We put them balloons on each table that you blow up and let go and they fly around the room making a squealing noise.
We also put party poppers, crackers and disposable cameras on the tables.

For the end of the night we brought Chinese lanterns to let go into the sky, this was really nice.

Place cards
We gave Adams little sister £20 and let her make them! They looked absolutely fantastic too :)

The Cake
Although wedding cakes are beautiful, they are very expensive so I looked into alternatives.
There is a local sandwich shop that we go to that sells the most amazing homemade chocolate brownies, we asked them to make us a wedding cake out of them!
This was only £60 and we still get people today talk about how amazing our cake was!
Another idea I did like was a huge pile of profiteroles instead of a cake!


Photographer
We weren't actually going to have a photographer, we just asked everyone to bring their cameras but one of Adams friends is a photographer and volunteered to take a few pics for us.
We also put disposable cameras on each table, these photos are my absolute favourite I really recommend doing this.
My uncle also filmed the ceremony on his video camera which came out excellent!

Honeymoon
We go on big holidays every year, holidays have always been the thing we will spend our money on.
We decided for our honeymoon just to go to London for a few days.
This is the place our first date was and we go there all the time but have never stayed over.
We booked a 5 star hotel through Price line and stayed for 3 nights for about £250.
I loved the idea of staying in the UK for our honeymoon because we can go back and do this every year for our wedding anniversary now:)

Transport
We hired an 11 seat limo to take me, some of my family and bridesmaids to the venue.
I bartered on the price for this and ended up getting it nearly half of the price they originally quoted.
The limo also picked us up at the end of day and took us into London.

Thrifty Travel Idea - Europe in a day


I've been going on day trips throughout Europe for the last 10 years.
If you just go away for the day you only have to buy one days worth of meals, theirs no overnight accommodation, no meals the next day and no need to check in any luggage.

I love to travel and only live about 20 minutes from Luton Airport. One of my favourite places to get away to is Geneva in Switzerland.
We go to Geneva a few times a year, we get the first flight out in the morning and last flight home at night.
The morning flight with EasyJet usually leaves about 6.30am and gets you to Geneva around 9am. The flight home usually leaves Switzerland about 9pm.
The cost is averagly between £35-£50 each return including all fees depending on what time of year you travel.
We have got such a great deal sometimes it has been cheaper to fly to Geneva then its been to get the train to London!

I've visited Geneva throughout all the different seasons... its a great place all year around. My favourite time of the year to go is September time because the weather is still nice and its always the time of year when I'm ready for a break! Another great time to go is November/December because everything gets Christmassy! There are lights in the streets, snow in the mountains, you can pick up great gifts and even bring home delicious Swiss chocolate advent calenders!

So here is what to do when you've arrived...

When you leave the airport arrivals hall head for the train station, you want to purchase return tickets to Geneva Central (Gare Cornavin). I can't remember exactly how much this is but its about £5 return.
The trains run very frequently literally every 10/15 minutes.

When you exit the train at Geneva Central follow the exit signs, they lead through a little underground shopping precinct (which has Yendi and an Yves Rocher) onto the Rue Du Mont Blanc. This road will lead you directly to Lake Geneva.


Every time I go there I think this is only an hour and a half away.. why don't we do this more often!??

From March till October the Jet D'Eau runs on the lake (the famous fountain in the pic above)
If your wanting to do the tourist thing from here you can get boat rides around the lake.To the right of the lake there is the English Gardens which is nice to have a little wander around. There is a beautiful clock which is completely made of flowers.

If your looking to shop... cross the road by the flower clock and walk straight forward, you will then see the main shop street on the right. Its a lovely cobbled street with both high street stores and little boutiques!

You get a cable car up Mont Salève.. its amazing! You get to the top and have views all over Geneva.. the Alps and Mont Blanc.
To do this trip take yourself back to the Rue De Mont Blanc.. on this road you will see a tourist information centre! Go in and talk to one of the reps and they will tell you exactly what buses to get (I wont post any bus names or times because I'm sure this changes very often)
You get a short bus ride out of the centre (only about 15 minutes) and then your dropped off at the cable cars and you go up from there. You can even hire bikes to take with you! This is the summer is beautiful and a great way to spend the afternoon.

or even take a trip to Lusanne! Lusanne is beautiful and only about an hours train journey from Geneva. Theres lots to see and Do;

Ok im going to be honest here... We don't keep returning to Geneva for the trips. I usually come here with my Mum and we spend the ENTIRE day shopping!

There are all of the usual great shops Mango, Gap, H&M etc and a lot of different shops that we dont get at home like... Promod, Pimkie and Tally Weijl.
And guess what shop they still have in Switzerland? C&A's!



As well as the more high street shops there are also some lovely boutique shops. I especially recommend checking out the shoe shops... I've brought some of the most amazing winter boots and shoes from here, Switzerland is so close to Italy they seem to be mainly made from Italian leather.
Don't be scared to hunt through the bargain bins too, I've picked up leather boots for £30 before that were originally priced at£140!

*One thing to remember if your planning to shop is that you will need a large bag with you because your only allowed one bag as hand luggage :)

If you head to the top floor theres a buffet lunch. There are chefs at counters cooking everything... pasta, chicken, veggies, wraps, soups.. you name it!
If the weathers good theres a balcony you can sit on and it overlooks one of the mountains, its stunning!

We usually tend to eat dinner before heading back to the airport... it's always quite a bit cheaper although the airport does have a nice selection of restaurants. We usually leave the centre around 7pm just so theres no big rush to get back. We always check in online before leaving home so when we arrive at the airport we have nothing else to do but head to a cafe or bar for a nice drink to end the day!

So that's how to do Geneva in a day!
Its a great experience, a cheaper way to see a new place and brilliant if you want to travel but have limited time!
